Email Client
- Thunderbird
Free. Better security than Outlook. Threading that works. Built-in Bayesian filter for spam. I wish it was faster though.
Instant Messaging

Imagine every IM protocol you've ever heard of (and several you haven't) in one client. For free.
Image Collection Management and Basic Editing
- Picasa
I was actually writing something to organize images when I found Picasa. I don't have time write anything this good. Not as quick as IrfanView for single image viewing. Free as in beer, but not as in speech.

Quick. Small. Easily does crops and resizes. Again, free as in beer, but not as in speech.
Media Player
- VLC Media Player
No screwing around with codecs. I wish the interface worked a little better. It's open source, so I suppose if it really bothered me I could fix it.
Archive Utility
- 7-Zip
Opens every archive format known to man. Pretty useful considering that Windows only knows about .zip
